Meadow Creek's Tomato Cups
 

 

Prep time: 15 minutes

Ingredients:

6 Campari Tomatoes
½ cucumber, de-seeded and finely chopped
1 large, or 2 small celery stalks, finely chopped
1 small onion, finely chopped
1 TBSP. lemon juice
2 tsp. Meadow Creek Poultry Seasoning **(SEE TIP BELOW)
1-2 TBSP. Sunflower seeds

Process:

Cut tomatoes in half.  Scoop out and reserve pulp, discarding the larger fleshy pieces.  Add remaining ingredients to pulp, mix well, and fill tomato halves.

**For a different flavor, you can use 1 tsp. Meadow Creek’s Southwest Seasoning instead of Poultry Seasoning)
