Meadow Creek's Stuffed Shells
Ingredients:
1 box Jumbo Shells
One 15-ounce container Ricotta Cheese
4 c. shredded mozzarella cheese (*** See Tip Below)
½ c. Italian bread crumbs
1 egg
1-2 TBSP. Meadow Creek’s Bread Dipping Blend
4-6 slices of mozzarella cheese
1 jar marinara sauce.
*** Buy un-shredded mozzarella cheese from your grocer’s deli and shred it yourself for less salt. We have found that the pre-shredded cheese makes the dish too salty).
Process:
Preheat oven to 350°F.
Boil shells in salted water until tender, approximately 12 minutes. Drain, and set aside on wax paper to cool.
In the meantime, mix ricotta cheese, the shredded mozzarella, bread crumbs, garlic cloves (if desired), egg, and Bread Dipping Blend.
Next, spread a thin layer of marinara sauce on bottom of 9x13-inch baking dish. Using approximately ¼ c. of cheese mixture per shell, form into egg-shaped balls and stuff each shell and place in baking dish. Spoon a small amount of marinara sauce on top of each shell. Top with mozzarella slices, then sprinkle a small amount of Bread Dipping Blend on top.
Bake at 350 degrees for approximately 20 minutes, or until bubbly and light brown.
