Meadow Creek's Gourmet Mashed Potatoes
 

Ingredients:

3 medium sized Russet or Yukon Gold potatoes, peeled and chopped
1 ½ stick unsalted butter (3/4 c.)
1 heaping TBSP. Meadow Creek’s Organic Vegetable Seasoning
Himalayan Pink Salt (added as a personal preference)

Process:

Place chopped potatoes in a medium pot, add just enough water to cover potatoes.  Add the Vegetable Seasoning and 1 stick (1/2 c.) of butter.  Bring to a boil, cover and reduce to a medium simmer for approximately 20 minutes, or until potatoes are tender.  Drain most of the water away, and mash potatoes using a mixer or manual potato masher. Add the remaining butter, if desired.  Taste and add a pinch of salt if necessary.
